The organic spelt starter imparts a tangy and distinct sour flavor to the bread, while the unbleached high protein bread flour made from hard red spring Canadian wheat gives it a hearty, nutty taste and a chewy texture. The diamond crystal kosher salt adds just the right amount of saltiness to balance out the flavors, while the filtered water helps to hydrate the dough and bring all the ingredients together.
The sourdough process involves fermenting the dough over a period of time, allowing the natural yeast and bacteria present in the spelt starter to ferment the sugars in the flour, producing lactic acid and carbon dioxide. This slow fermentation process results in a rich, complex flavor profile that is both tangy and savory.
